Honey Ginger Broccoli & Grilled Chicken Stir Fry (Honey Ginger Balsamic-Seasonal)
/This is a classic Asian style dish is made using Honey Ginger Balsamic instead of honey, ginger and soy sauce as the sauce base.
Preparation:
Pre-cook brown rice per instructions.
Cut a large chicken breast in half and then into small tenders. Pound each slightly to tenderize. Cut into bite sized pieces and saute in olive oil until browned.
Chop 1/4 cup of raw peanuts.
Cut large broccoli crown into flourets.
Cut 1/2 of a red bell pepper into slender strips.
Grate a large carrot.
Mix 1/4 cup honey ginger balsamic with 2 Tablespoons of water and a teaspoon of corn starch.
Cooking:
Saute broccoli and bell pepper in olive oil for 5-7 minutes until slightly soft and edges start to brown.
Add carrots, peanuts, chicken and sauce to the pan
Simmer for about 5 minutes until sauce starts to thicken.
Serve warm with rice.
