Mediterranean Quinoa Salad (Traditional Balsamic & Lemon or Tuscan Herb Olive Oil)
/Crunchy cucumbers, sweet tomatoes, tangy onion, sharp cheese, olive oil & balsamic. Need more be said?
Place the following in a bowl:
chopped baby cucumbers,
chopped vine ripened tomatoes,
chopped celery heart including the leaves,
finely chopped red onion or shallot,
chopped green olive and
pine nuts.
Ratios are to your liking but I like mostly cucumber.
Season mixture with salt and pepper.
Drizzle liberally with one of the following options and stir together:
For a citrus flavor use lemon olive oil (or if you do not have lemon olive oil, use EVOO and the juice of one lemon)
For an herbaceous flavor use tuscan herb olive oil
Dish onto a bed of cooked quinoa.
Place a slice of feta on the side or crumble feta over the top.
Drizzle liberally again with traditional dark balsamic vinegar.
A satisfying meal or side dish for kabob.
