Smoky Dukkah Pesto (Smoked Olive Oil & EVOO)

What you will need:
1 large bunch fresh basil
3 tablespoons Dukkah, or more, to taste (a nut and spice blend you can purchase at Trader Joe's)
extra virgin olive oil as needed
1 tablespoon of smoked olive oil
In a mini food processor or blender, pulse basil and Dukkah together until basil is roughly chopped. With blade running, slowly stream in EVOO until mixture forms a loose paste, or to your desired pesto consistency. Stir in Smoked Olive Oil and season with salt and pepper to taste.
Use this pesto in so many ways:
on pizza or flatbread
on sandwiches … grilled cheese, panini, pita, tortilla roll etc
on roasted chicken or chops
in scrambled eggs or avocado and egg toast
