Turkey filled Lettuce Cups or Taco Salad (Fajita Lime Dipping Oil)
/Our customers are so smart. Mita suggested blending ground turkey with our Fajita Lime Dipping Oil.
She was so right! Perfect for lettuce cups or taco style southwestern salad.
What you need:
Yellow onion
Red bell pepper
Black kale
Lean ground turkey
Fajita Lime dipping oil
Romaine lettuce hearts to make lettuce cups
Sour cream
We saute’d chopped onion, bell pepper, and black kale in extra virgin olive oil until kale was soft and onions were slightly golden and transparent.
Then we added lean ground turkey saute'd until fully cooked.
Next we added in about 1/4-1/3 cup of the fajita lime dipping oil. (A bit of a guess on the amount because we shook it in direct from the jar, but it was definitely about this much based on what was left in the jar). Note: make sure to shake the oil liberally first to make sure you get all of the spicy goodies.
We cooked this down for about 5 minutes more to let all of the flavors meld.
We put it in lettuce cups with a dollop of sour cream. DEVINE!
Taco Style Salad Epilogue:
I used the leftovers for an amazing taco style salad later.
I just made a plate of chopped romaine, warmed the turkey and scooped it onto the romaine and then added:
slightly broken up white corn tortilla chips
a scoop of fresh salsa,
chopped ripe avocados, and
sour cream
