Cheesy Strawberry & Basil Bruschetta (Basil Olive Oil, Strawberry White Balsamic Vinegar)
/Bruschetta toast is useful as a base for many snacks and appetizers. This version is so pretty and tastes just as good as it looks.
What you will need:
1-2 cups sliced strawberries
enfuso strawberry white balsamic vinegar
honey
baguette
enfuso basil olive oil (can substitute extra virgin olive oil)
chevre goat cheese
optional, ricotta or cream cheese
fresh basil
optional, fresh ground pepper
Marinate your strawberries. 1 cup will top 6-8 pieces of toast.
Coat sliced strawberries in enfuso strawberry white balsamic vinegar.
Add a generous drizzle of honey and set aside to marinade.
Make your bruschetta toast.
Preheat oven to 375 convection bake or 385 regular bake.
Cut a baguette into 1/2 inch slices and lay the slices out on a baking sheet.
Brush each slice liberally with enfuso basil olive oil. You can use flavored olive oils to create a variety of bases for different recipes. I used basil since it is a "perfect pairing" with strawberries.
Bake the slices until golden brown and slightly crispy around the edges. Watch them carefully as they can overcook quickly. It should only take about 5 minutes in the oven.
Prep your cheese.
I love chevre goat cheese. You can use it as is, or make it a little milder and more spreadable by adding a little sour cream or ricotta. In either case, whip it up so it will spread nicely.
Then stir in some finely chopped fresh basil.
Reduce your sauce. (This step is optional as you can use the sauce as it is, but a bit of reduction will intensive the flavor and make it really stick each to slice without making it soggy.)
Your marinated strawberries will make a sauce.
Drain the sauce and cook it in a non stick pan for about 1 minute adding extra enfuso strawberry balsamic if needed until you have nice thick liquid for drizzling on the toast.
Assemble the ingredients.
Spread the goat cheese on the toast.
Layer on strawberry slices.
Top with bits of basil.
Drizzle with the reduced sauce.
Optional. For bit of of a kick, add fresh ground pepper.

Try this with other cheeses like sliced brie or warmed & softened gorgonzola.
