Fig and Avocado Toast (Rosemary Olive Oil)

We love this dish and this beautiful picture!

Fig and Avocado Toast

Select your favorite artisan bread and cut two slices.

Toast lightly until just golden and slightly crunchy.

Spread both with goat cheese.

Top one with fig preserves and then fresh figs.

Top the other with sliced avocado and then with sliced heirloom tomatoes … you can see that a green tomato was chosen and sliced on the side of the plate, but any color heirloom will work.

Sprinkle with either smoked, truffle, or Himalayan sea salt (original recipe calls for smoke but alternatives added in case you are lacking this ingredient) and fresh cracked pepper.

Drizzled with rosemary olive oil.

Eat!
