Balsamic Berry Trifle (Dark Chocolate Balsamic & Blood Orange Olive Oil)

Trifle is a classic dessert made by layering cake (like angle food or pound cake), sweet fruit in its own syrup, and whipped cream. It is commonly made in a tall glass so that you can see the layers for a visual effect.

Balsamic vinegar is a great tool for helping to pull the sweet syrup from fruit and with its bit of tang adds a balance to the other sweet parts of this dessert.

Bottom line, balsamic based trifle is beautiful, delicious and so easy to make.

Balsamic Berry Trifle

We made this trifle in martini glasses. They are less deep than champagne glasses so you can only get two layers but they are easier to scoop the desert out of and do not require a long dessert spoon. However if you have long dessert spoons and champagne glasses, this is also a beautiful effect and you can get 3 layers.

To start create/assemble all of the ingredients as follows:

  • Macerate (in other words mash with a fork) a selection of berries with enfuso dark chocolate balsamic vinegar. What a combination; berries, balsamic and chocolate! Let the mashed berries sit for about 15-20 minutes to allow the syrup to form. We used strawberries, blackberries, and raspberries, but you can use any combination you can find available fresh. Blueberries will work well also.

  • We purchased an angel food cake (if you are ambitious you can make your own) and cut it into small pieces. For added richness and moisture we tossed the cake in olive oil. You can use extra virgin olive oil but a real treat is to use blood orange olive oil. You can also substitute pound cake but it will make the dessert a little heavier.

  • Make fresh whipped cream; we used the Alton Brown recipe which can be found here .

To make the trifle layer all of your ingredients in the order shown in your selected receptacle, i.e. champagne or martini glass. Try to achieve at least two layers.

  • Cake pieces tossed in olive oil

  • Fresh whipped cream

  • Berries in balsamic syrup

Cool in the fridge during dinner so all flavors blend then whip it out for the perfect meal finale.
